It opens with Tirunelveli halwa — the wheat-milk halwa the town is known for, cooked down slow until it turns glossy and holds its shape, finished with ghee-fried cashews. Beside it sits badhusha, layered and flaky, soaked through with sugar syrup so it gives way the moment you bite. Athirasam brings the older taste: rice flour and jaggery, rested and then fried, crisp at the rim and chewy through the middle. Rounding it off is karupatti mysore pak, made with palm jaggery instead of white sugar, which gives it a darker, more mineral sweetness than the version you may be used to.
