Built around karupatti, the palm jaggery that South Indian kitchens used long before refined sugar arrived. Karupatti halwa is dark and dense, closer to molasses than to caramel, with a faint smokiness the jaggery carries over from the boiling pan. The karupatti mysore pak is the same idea in a firmer form — rich with ghee, sweet without being sharp. Athirasam adds the crisp-chewy contrast. And the box finishes with palkova from Srivilliputhur, the town whose milk sweet has its own reputation: fresh milk reduced patiently over heat until it thickens into something soft, grainy and gently caramelised.
